Chicken Rogan Josh by Mr Mannan, Shabna Tandoori, Monton
SERVES 4 - 5
INGREDIENTS:
2lb chicken breasts cubed
2 onions, peeled and finely sliced
4 cloves crushed garlic
small piece of crushed ginger
1 1/2 tbsp ground coriander
1 tbsp ground cumin
1 tbsp turmeric powder
3 tbsp chilli powder
2 tbsp tomato paste
1 pepper sliced
4 tbsp vegetable oil
salt to taste
METHOD:
Heat the oil in a saucepan, add garlic and ginger and stir fry for a few seconds.
Add the onions, pepper and salt, stir fry for 4 minutes until onions and peppers are soft.
Add all spices, stiring for 2 minutes. Add tomato paste and 4 tbsp water and cook for 2 minutes and add the chicken stirring well.
Turn down the heat, cover and simmer for 15-20 minutes. Cook until chicken is tender.
